Why are some football plays recorded as over 100 yards?

Some plays end as soon as the plane of the end zone is broken and like yesterday (9-9-07) there was a 108 yard kickoff return.

Plays do end when they reach the end zone, but some plays begin in the end zone.

Kickoffs, interception returns and fumble returns can begin inside the end zone.

Therefore, their is 8 yards added to that type of play.

the field is 100 yards long. The endzones are an extra 10 yards in. 108 yards is 8 yards deep in the endzone
The field is only 100 yards long, that is where the 100 comes from. The 8 is how deep in the end zone the player received the ball. If a kick is received 8 yards deep then it is added to the 100.
